How hot do the searing burners get on a Viking, Lynx, or Weber. Wouldn't it make more sense (and cheaper) to sear with a salamander which hits the steak at 1800 degree and grill on a regular grill, under 1000, than paying 5-7k for the high end grills that have a searing burner?
