I rehab Weber gas grills in NC. I will share what I know about the issue.

NG is delivered at a much lower pressure than LP and all of the passages in the Weber valves are larger than propane. to allow more gas to pass through.
You can burn either gas in grill the burners don't care. Hook LP to a NG grill and the grill will burn hot even on low settings. NG likewise will not burn hot in a LP grill.

More than just the orifices have to be changed.
