I have a Weber EP330 on the way and can't wait to get started using it. I haven't used gas in a while and went back that way for convenience, hoping I will be much more active if I can just turn it on and get grilling.
Anyway... I do want to introduce as much flavor as possible, given the concessions gas grilling makes in that area. I have two "V" shaped SS smoker boxes that I plan to place on either side of the sear burner directly on the flavorizer bars, while cooking indirectly on the other side of the grill when I have a larger piece of meat.
I have read about the trouble Getting smoke with a gas grill but think I have a decent strategy (if only in my mind.) LOL
Any thoughts on whether pellets may give me a better result than chips? Should they be soaked?
