Sure.

It's easy. The more hot charcoal you have in a pile, the hotter it is. You pile it up heavy on one side of your grill for high temp cooking. You spread it thinner on the other side for lower temp cooking.

If you have a big enough grill, you can even have an area where there is no coal directly underneath so as to keep stuff that is done cooking still hot on grill.
