Another thing RJ, I'll second what someone else said. I like my ribs a little chewy...not tough, but chewey. If you like them fall off the bone, cook 'em a bit longer.

I'm doing ribs for the first time soon. In my book, they recommend doing 3 racks. When the 1st rack is just done, take it off the grill. Leave the second rack on for 15 minutes more, and the 3rd rack on for 15 minutes after that. That way, you can see what effect the additional cooking time has, and you can see which texture you like the best.

Lots to learn. I feel very intimidated. I'm still trying to decide what cooker to get.
