A couple of quick follow up questions...

Do I want to have the probe at upper grill level, lower grill level, or somewhere else entirely? One suggestion I heard for mounting a thermometer probe is to drill a 1/2 inch hole in the smoker, and get a cork that will plug the hole. Then to drill a hole through the cork that I can snugly press fit the thermometer probe into. This method makes sense, but are there any other reliable ways to do this that maybe don't involve drilling a hole in my new smoker?

Second, which retailers are likely to carry lump charcoal? I don't think i saw any at Walmart... I really don't know where else to look... I don't think there are any specialty shops near me that would have that, unless it's more popular than I imagine...
