Jim, IMHO the grates are fine, heat changes the color of the SS normally.
If you were using a grill grate brush you shouldn't have scratched the SS.
Grease is seasoning that will keep food from sticking, personally I want it there. I brush my grates as soon as I remove the food, and again just before putting on food next use. Should there be any microbes on the grates, heating up the grill to the cooking range, past 300º range all will become protein (lol)
The cast iron grates have more even heat, leave great grill marks on the food, but are also higher maintenance.
Roll with what you have, I think you will get used to them and like the ease of care.
I recycle Webers, leaving food on the grates and FBs is the biggest culprit in rotting them. Brush the grates after every use and scrape the FBs with a putty knife once a month and they will last a long time.
