I've come to believe the best temp to cook ribs is 275 degrees. After the first 45 minutes or hour, start spraying them with apple juice and turning them every 30 minutes. Depending on how meaty they are, they will normally be done before three hours, sometimes closer to two hours.
Spray, turn, rotate....spray, turn, rotate...
