Real Eastern NC BBQ is whole hog cooked over oak and or hickory.
I cook boston butts and sides together on my (auggg) gas smoker for abount 10 hours and then chop them up, seasoned with vinager and pepper mix. It's got to be a special occasion and or funeral to drag out the wood cooker.
BBQ, slaw, cornbread, although on my Dad's 80th, I got out the brunswick stew wash pot.
