I live in the part of North Carolina where people are supposed to know what pork BBQ looks and tastes like. You'd be surprised to know how many don't have a clue about what they get on a BBQ plate. Most people just think it tastes good. There are lots BBQ joints in NC, and the taste varies. In NC, what is served with the BBQ is as important as the BBQ itself. If you have great BBQ, and bad beans, slaw, and hushpuppies, the meat will not keep you in business. Great peach cobbler helps some too.
