Ok, Butt comes from the front leg and ham from the hind leg. Butt is one of two cuts from a shoulder the other is called picnic.

I recently had a conversation with a local bbq joint owner family member. They only cook shoulders and when on occasion a ham gets mixed in, customers complain because the ham meat is reddish in color that the Q isn't done. He said that they keep their guard up to not cook any hams.

This is a North Carolina Q joint where the local folks know what pork bbq is supposed to look and taste like.
