I have to agree with griller, but it sounds suspiciously like you have a gas grill. I have very little experience with gas, but it sounds to me like some part of it is working improperly. I hope you don't take offense at this, but is it a high quality grill or a cheapo? I must respectfully disagree with "Jim" on the oil issue. Yes oil is a must on "most" foods (extra virgin olive oil preferable) you should not oil the grate. Oil the food. Your cooking method should also greatly depend upon your cut, kind, size, etc of meat. What are you referring to with your post as far what you are cooking.
