Cooking meat to the well-done stage takes most the juice and tenderness out of it. It is far better to learn to eat it medium-well, or even medium. Having said that, if you are set on cooking it to well-done, keep the temperature in your cooker on medium or lower (experiment for the best setting) and cook it indirect, i.e. not right over the flame. That is, you need to cook it slow enough to get done inside without burning the outside. Good luck.
