Please Help, I Can't Cook Anymore

For some reason I'm having a problem cooking meats. Regardless if I have the flame on low and cook for a long time or flame on high and cook for a short time, the meat always comes out crispy on the outside and too rare on the inside. I can't seem to properly cook anything well done anymore.
