I smoke chicken in my Weber Kettle. I generally cook it on the food support grill and keep the dome about 230-240 deg F, which translates to about 210 at the grill.
Chicken at this temperature takes about 4.5 to 5 hours to cook, I use a pan really close to the coals so the humidity is very high. The chicken turns into a sweet highly smoked product.
So, my opinion is low as in about 210 deg F and slow over about 4.5 to 5 hours. Infuse with mild smoke for about 2 hours or so.
