I smoke my chicken breats at 250 degrees for about 2 hours or so. If you are smoking hind quarters a good indication is to wiggle the leg. When it feels like it is about to fall out of the socket it is done. I cook my breast to 160 degrees and dark meat to 175 then let rest. Hope this helps.
