Smoking Chicken

Hi, I use a propane smoker. I know I know...but I like it. Can someone please give me some pointers on smoking chicken split breasts and lets? How long...what temp...etc. I'm concerned that I may introduce bacteria if I cook it to slow at to low of a temp.
