Something is amiss somewhere if you are having these issues. Try it again like so if using a charcoal chimney:
1) Fill the chimney all the way up and get him going good, until at least 3/4 of the briquettes are ashy
2) Dump on the grate and add more charcoal if necessary and try to get them stacked like a pyramid
3) Keep the bottom vents all the way open and do not cover it yet
4) When all the briquettes are ashed over, spread them out evenly, and grate on the grill, and put the lid on and wait about 10 minutes
You should not be able to hold your hand above the cooking grate for more then 1-2 seconds...if it is still not hot enough, check your charcoal...it might have been wet or bad. Lump will burn much hotter then briquettes as well. You should have no problems getting the grate temp to 700 degrees plus like this...good luck
