Keep it as far from the heat as possible - 200-225 degrees. Start with the fat side up and cook it for 1-1.5 hr for every pound. Turn it at each half way point. If you are cooking for 8 hours, flip it after the first 4, then after another 2, then after 1.

Use a wood chip box to add extra smoke flavor. Double wrap in heavy foil after first 4 hours.
