I've done countless salmon on the grill and the key is good heat to get the meat heated up quick and .... to brush some olive oil on the grate after it is hot and scraped clean before placing the fish on the grate. It is crucial to have the oil film on the grate hot. After you get the hang of this you can discard grilling with the skin on the salmon. I notice a greatly improved flavor when the skin is removed.
