I did 56 strip steaks for a installation gig last summer. I used the thermalpen and did them to about 135 degrees. All the steaks were eaten as cooked except one. I put it on till it was well and everyone was happy. As they were done I put them in an aluminum pan and kept it covered away from direct heat. They were fine. You cannot please everyone but like I said I had only one complaint so that isn't too shabby. Good luck with it.
