Wondering if anyone can help me out with smoke pouches. I've wanted to try smoking on the grill for while now, and just picked up my first bag of wood chips. I followed the directions on the bag but am not having much luck so far. I soak the chips in water, then add some dry chips and wrap them in foil then poke a bunch of holes in it. If I put it underneath the cooking grill, the pouch ends up bursting into flames. If I put it on top of the cooking grill, nothing happens and I don't get any smoke.
I'm cooking on a propane bbq.
Any help on how to get some good smoke going? Thanks!
