Wow - thanks everyone for the comments. Jamie, I try to follow your instructions in the book to a T - my prep is super simple: plenty of olive oil and just a few sprinkles of dried dill.

My Weber has stainless steel grates - I try to keep them super clean - no left over fragments (though the grills have blacked from use).

I'll get another salmon this weekend and try two things: keeping the heat on high during cooking and leaving the fish down another minute or so.
