I wrote that Weber cookbook so I feel it's my resposibility to help your grill salmon with success. First I want to be sure your temperature is high enough. You mentioned preheating to 550, which is good, but then you also mentioned medium heat. You need HIGH heat. Another key is timing. 5 to 7 minutes may not be enough time on the first side. You may need 8 to 9 minutes on that side to get a clean release. I am not suggesting you overcook the fish. The total cooking time for a 1-inch fillet will still be 10 minutes or less, but 8 to 9 of those minutes may be on the first side. The next big issue is cleanliness. After preheating the grill, make sure to brush all the bits and pieces off the grate. Finally, this technique works best with a salmon that has been brushed thoroughly with oil and seasoned simply. If you have any kind of marinade or glaze, paricularly with sugar, the fish is bound to stick. I hope that gives you enough to try again. Let me know if you still have trouble.
