I have had this grill since last spring. I would do it indirect with the charcoal and some wood chips on one side and the meat with a pan under it on the other. I don't know how long but I would go for medium rare to make sure its tender. I use a remote temp. probe on this type of cook and just keep an eye on the temp. I would say 125-130 should be what you are looking for. Maybe some salt and pepper and a little garlic powder for flavor. Good luck.
