About a month ago I cooked Ribs on my Weber Genesis Silver B. I washed and dried the ribs. Heated up the grill for about 10 minutes on full blast. Put in a couple of smoker pouches w/ apple chips (soaked for a while) and put over the back burner). When it started to smoke I turned off the front two burners and oiled the grill up w/ vegitible oil and let her cool down for a few minutes and put a small pan of Apple Juice over the back burner (refilled a couple of times durring cooking) and placed my ribs over the front two burners and on the warming rack meat side up (when they cooked down I was able to get them all over the front burners). I did brush some apple juice on the ribs a few times. About 3 hours into it I applied my bbq sauce and let it cook for another 15-30 minutes.
THEY WHERE GREAT.
