Thanks for your reply. I bought the large gas pig cooker from Coastal Enterprises. It has a large optional woodbox, so I don't have any trouble getting the smoke. It is supposed to be able to cook as low as 180, but I can't seem to get much below 250 with the lid closed. I'll try propping the lid open a bit. I cook my butts at home because of the time it takes, but adding chicken to the cook made me consider gas so I could cook on site in a short time. It works out pretty well with the mopping recipe I use. Thanks again.
