I surprised myself. I put a half-hog on the Weber gas grill and it was cooked to perfection in 3 hours.
Stuffed that carcass in there; barely fit. Middle burner off. Other two burners at absolute low.
Marinaded that 1/2 pig in a Cuban mojo sauce overnight.
This was a feral pig, gross weight about 75 lbs, fat, fat sow. I shot her out on the farm. She and kin-folk pigs have been tearing up the place.
I was impressed with the Weber once again. Lot's of grease to deal with, of course.
