An 11 lb. prime rib roast should cook great on your Weber from start to finish. As far as holding it, one of the best investments I have ever made was to buy one of those 18 qt. electric roasting ovens. There are several brands out there: Nesco, Rival, Westinghouse just to name a few.

Once your roast is done in the Weber, transfer to the roasting oven. Put about a cup of water in the bottom of the roaster. Then put the rack in, and your cooked roast on top of the rack. Cover and set the roaster temp to 200*. At this low temp, the roaster will keep your prime rib hot and moist until you are ready to pull and slice it. Pull it about 20 minutes before you are ready to slice and let it set out at room temperature.
