Hard to beat a rib roast on the smoker or grill...here is what have done (got it from the bbq forum and it turned out great)
Rub down with wooster sauce and coat with montreal steak seasoning - wrap in saran wrap and let sit overnight
Take out the day of the cook and pack rock salt on the outside - let sit out at room temp for 2-3 hours
Place your coals on one side of the kettle, and get temp up to 250-275
Place the roast on the OTHER side of the grill and cook til about 120 for rare (should take about 2 1/2 hours or so). You can put some wood chunks on the coals if you like. When done, take off, and wrap tightly in foil - it will hold for at least an hour in there - the temp will rise during that time, so if you like medium rare, then take off around 120-125 and it should be right at medium rare when you eat it...good luck!
