I tried the foil pouch and it alway caught on fire, flames shootin up burnin the meat! I don't like the idea of burnt foil on the meat. I love smoke and have never tasted anything oversmoked out of my smoker. Also nothing says you have to fill the Smoker Pro to the top, in fact I have only done that a couple of times when smokin a couple of briskets. I also cut the bottom out of the old cast iron chip box and use it to keep the Smoker Pro just above the coals. Found it pretty much stops the flames from starting.
Just did two pork loins one with a regular type rub the other a fancy apple based marinate and they came out great. Great taste from the smoke to the rub/marinate. Used Apple and peach pellets.
