chicken doesn't take that long to cook, so you could just light a full chimney and dump half on each side. You could also put some unlit, non matchlight charcoal in there, and dump the lit stuff on top of it. It sounds like this may have enabled your fire to last longer. If you get some good quality, dense lump (wicked good, original charcoal, etc), it should really last a good while.

Chips tend to burn up quickly and/or fall to bottom of grill. I'd get some chunks. I get them from bbq galore and now I use a camp axe to split them in half or thirds. On a kettle, even one or two of these smaller chunks will do better than a bunch of chips.
