pork butts have a built-in thermometer, the bone. when it comes out clean and easily, the butt is done. at 225 it should take about 1-1.5 hours per pound on indirect heat. that is just an average and can be effected by many, many factors, including how many times you opened the grill to check on it. some say that each time you open it, you can add as much as 30 minutes to the cook time. keep trying and find out what works on your grill. the best part is you get to eat all the tests!
