My grill, and the opening to the fire pit, are 36 inch diameter too. Not usre what type of mortar was used. The limestone hearth is sitting on a flagstone patio, and no reinforcements were needed. The firepit is lined with fire brick and designed to drain after a rain. The pit is as deep below the flagstone as one fire brick standing on end, with fire brick set in the bottom. There is a galvanized drain pipe with removable cap in the center/bottom. There is a pipe/sleeve set in the hearth that the grill pivot post slides in. After cooking and brushing clean, it's super easy to remove the grill and park it in the garage. So, the grill stays very seasoned and rust free. The grill/firepit patio sits on the shady side of the largest Spanish Oak in my backyard, which makes it cool enough to use even in the summer.
