I have a place here called Nic and Willys and its a take and bake place.. I like to get those and do them in the pit.. Especially for partys.. You can get just the cheese ones(cheaper), and then have all the toppings sitting out so they can top their own before it goes in the pit..
I had a cheap stone break on me once, but that was in the egg and I had it way to hot.. I agree 450-500 is as hot as you need for the pizza.. But I always stack two stones now when I do my pizzas so the crust doesnt burn.
Also its easy to oversmoke them, it only takes a little.. For me anyway...
