You can use a thermometer to measure the internal temp of the meat, or the cooking temp of the cooker, but not both at the same time. I use two probe thermometers with cables that I lay over the side of the cooker so I don't have to lift the lid to take temp readings. I poke one probe into the meat so I can tell when the meat is done. I slice off the end of a spud, so it will sit flat on the cooking grate, and poke the probe through it such that the probe sits about 3 or 4 inches above the cooking grate. This thermometer is used to watch the temperature in the cooker at grate level. I bought Taylor brands at Target for about $15 each. The next step up would be to buy two remote probe thermometers -- use them the same way, but take your readings from inside the house rather than at the cooker.
