Well, since this is an op-ed piece, first fire up the charcoal grill and use the gas grill to boil water for the dishes afterward.
As to the steak, I prefer strip. T-bone or porterhouse are good. Filet in my opinion lacks falvor. It is tender though. I mix a bit of soy, worst. and maybe a splash if red wine if I have it on hand. Crush a couple of garlic cloves and toss them in. Marinade for the length of time it takes the coals to get ready (about 20 minutes). Take the steaks out of the marinade and s&p. Put on a very hot grill. Cook just till cooked to your preference. IMHO if you are going past medium rare, cook a hamburger instead, you don't deserve good steak.
Take off, tent with foil and let rest 10 minutes or so. Eat it the way it is. IMHO if you want sauce on it, cook a hamburger instead, you don't deserve a good steak. All the sauce just covers the flavor.
