I have two racks of seasoned babybacks in the frige that I plan to cook tomorrow, cooking indirect in a Weber Kettle. I normally cook ribs in a smoker, so I don't know much about cooking them in a grill.
(1) About how many brickettes should I use in each of the two charcoal baskets in order to generate the right amount of heat?
(2) About how long will it take to get them done in the kettle?
