Use the indirect cooking method. Put a foil drip pan in the middle of your charcoal grate. Bank coals on both sides of the drip pan. Put a couple of fist sized chunks of smoking wood on each pile of charcoal. Place the turky on the cooking grate over the drip pan. Cover the grill. When the temp starts to drop add hot coals to each pile. Figure 15 minutes per pound.
