I answered over on the BBQ forum, I realize I forgot the time here. If you are are going to do them indirect it's going to vary depending on the grill. They will definitely cook faster than you are used to, but not as fast as direct. I think 3 hours would be a stretch, but then again it depends on the grill. I have a weber and the burners run horizontal, left to right, and will get down pretty close to bbq temps with just the front burner lit on low. I don't think you could actually do it indirect with burners running vertical because of surface area. Also even with the weber you are limited to a couple of slabs for the same reason and you would need to rotate quite a bit. I would go with direct if you can get them far enough from the fire. They will definitely have a different texture but are still pretty good. I think 1 1/2 -2 hours if they are high enough. They are done same as they are over charcoal. I know this is vague and might not help much if you are trying to explain it to someone who doesn't cook but I think you would do just fine. Hope it helps a little.
