Depending on the grill, they could turn off a burner or 2 and do them indirect like on a regular grill. Maybe some soaked wood chips in foil with some holes poked in placed over the hot burner. You can also do them direct if you have a grill that allows you to get them far enough from the flame, min 6 inches, 8-10 is better . They take a lot of attention like this though, just like over charcoal. I baste when I cook them direct with Italian dressing that has enough "whats this here sauce" to color and some orange juice. Baste came from a Jerry Roach video. Hope this helps. Oh yea, I would use a low sugar rub.
