LM, it seems to methat you have two different problems.
The first one has to deal with the cleaning of the grill itself. If the store and manufacturer both say to clean it before cooking on it, then I would probably heed their advice. If you don’t the grills may burn out/ rust quicker than you may want (may not be too bad depending on the variables).
The other problems has to do with varmints. Would it be feasible to place some sort of wire barrier across any holes where the critters are getting in? I say this because them rodents will probably (I’m guessing here) still be able to smell something in there that will attract them, regardless of your cleaning methodology. I would consider trying to prevent their entry, rather than changing the cleaning practices.
