Not sure how you go about smokin steer on an H2O, never done that :-)
Only piece that I ever smoked that came close to a steer would be a brisket, but the smoker (Charbroil H2O) did take a lot of tending over 18 hours or so....but the results were awesome.
As far as the pig is concerned, the loin and the tenderloins can be smoked in about 2 hours, and the ribs can be done in about 6 hours - so try those shorter cooks cuz they be less demanding of your time.
FYI - pork butt and picnic take 14 hours plus ++.
