The thermometer on the Weber is great but remember that it's telling you the temperature up in the hood. The temperature at grate level will be appreciably higher. Use a Polder remote thermometer, stick it all the way through a poatao or some balled up foil and put that on the grill right next to the ribs. That way you'll know what temp you're really cooking tham at. If you want to rely on the hood thermometer then construct a rack that will elevate the ribs to approximately that level.
