I've found a Charbroil online manual (pdf format) that looks like the H2O. The page does take a long time to load, and I'm not sure as the text would be legible once printed, but here is the web address:

Your smoker is known here as an 'ECB', an acronym for El Cheapo Brinkmann. If you search the archives for 'ECB' there are some references that will apply to your smoker.
