I got the stainless burner upgrade...You can still have flare ups because any dripping that land on the rock grate can stick and burn later so you do have to keep an eye on food if direct cooking, but once it has burned off you are good without looking for awhile especially if cooking on low heat. If you are cooking indirect then now looking required at all. I think this will be a problem with any grill that you use for direct cooking though. All in all I love this grill, I pour sauce on wings etc. at the end of the cooking process and the drip pan works great. There is no bottom to the grill just the drip pan which you can easily clean occassionally..slides out so no sticking you hands down inside the grill and scraping excess particles that fall to the bottom to become flare up problems..NICE!
I love the cook grids, hold heat well and the grill gets hot enough to sear anything.
