My dad loved to use mesquite while grilling steaks. He would soak them in water before throwing them on the lit charcoal. Chips would last longer & the steam/smoke combo seemed to penetrate the meat well. I haven't tried this personally, but I get my Weber, what a way to 'test' it out.
