This question is for all you Texans and anyone else who uses mesquite. I picked up a couple of 10# bags the other day and I want to grill some steaks with it. I have been to a restuarant that only uses mesquite and I want to duplicate it as their steaks were outstanding! Do you burn the mesquite down till it is gray or do you use a combo of charcoal and mesquite? Going to use my Weber to cook on. Any help is appreciated!!
