Pork steaks are cut from the shoulder where as pork chops are cut from the loin area of the hog, but I am guessing you knew that already. :-) I am referring to pork steaks.
Just as country style ribs cut from the spinal area of the hog (loin cuts) take less time to cook than the "economy" country style ribs cut from the shoulder, this same cooking method applies. Pork chops take less time to cook and have a lower finish temperature (around 145º-155ºF) than pork steaks.
BTW, I like a good pork chop cooked on the kettle too.
