My brother-in-law is from St. Louis and he grew up with pork steaks and they are still his favorite..
Trouble is he is a terrible cook..
I been trying to perfect them for him lately.. Im not there.. I even went so far as to buy a dozen center cut pork steaks.. I rubbed them all, tied them with butches twine back into roast shape.. Then I smoked them for a few hours and untied and finished n grill..
Whoaaaaa.. way too much rub...~~~~~~~ Learn something ever time...
Anyway he grills his over coals straght through,, I have best luck searing and then finish indirect.. How about you.. Cough up those pork steak secrets... I already figured you used salt and pepper...
